jammin with oatmeal jammys

i'd like to introduce you to my new favorite cookie:
the oatmeal jammy

 
here's what you need
1 & 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
1 cup unsalted butter, softened
1 cup packed dark brown sugar
1/8 cup granulated sugar
2 eggs
2 teaspoons vanilla extract
3 cups old-fashioned oats
jams or preserves (i used blackberry)
 
here's what you do
1. preheat oven to 350°.
2. mix together flour, baking soda, cinnamon, and salt. Set aside.
3. beat butter and both sugars until light and fluffy.  then add the eggs, one at a time, mixing well between each one.  mix in vanilla, and gradually add flour mixture, mixing until fully incorporated.  then, add in the oats.
4. scoop dough onto prepared pans, placing them about 2 inches apart.  using your thumb, make a hollow in each cookie.  fill each hollow with jam, maybe a small spoonfull. i used blackberry jam.
5. bake for about 12 minutes, until cookies are fully baked and the edges are golden.
 
 i know, my photos are horrible.
but these yummy treats speak for themselves.

bub-hub still prefers the tried and true oatmeal chocolate chip cookie,
but this is definitely my new favorite.
