conquering the omelet

omelets + sunday mornings = meant to be.

when bub-hub and i were in mexico for the honeymoon, every morning, without fail, you could find us at the omelet station. fresh tortillas, fresh veggies, real mexican cheese. can't beat it.
this video kind of inspired me.





i've always been intimidated by omelets.
mostly becauase i'm a messy cook to begin with,
and eggs, in any form other than scrambled, just make me nervous.
maybe i'll try it. in honor of martha.

what do you like in your omelets?

  1. I make a mean potato and egg omelet, my husband requests this a few times a month. My tricks are I only use red potatos with the skin left on them, I scrub them really clean of course, and chop them pretty small so they brown up nice before I add the eggs. I also mix my eggs with milk to make the omelet light and fluffy, and add parmesan cheese for a little salty bite. So yummy!

  3. I started eating eggs within the last year to get more protein into my diet. I ate omelettes a lot in Cambodia thanks to my husband, throw in a bunch of different bell peppers and onions. yum yum.
